Interesting fact: Many of the "traditional famous dishes" in China originated in the late Qing Dynasty or even modern times.
Chili peppers were introduced to China in the late Ming Dynasty, but really became part of the cuisine only after the mid-Qing Dynasty.
The "Eight Major Cuisines" is a modern classification that was officially established in the 1970s and 1980s.
To be more specific:
Mapo Tofu was born in 1862.
Beijing Roast Duck (modern oven version) was born in 1864.
Guo Bao Rou was born in 1907.
Chongqing Hot Pot was born in the 1920s and 1930s.
Da Pan Ji was born in the late 1980s.
There are many more "invented traditions" like this in China.
